Ingredients:

1 lb ground beef or turkey, browned (optional)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) diced tomatoes, undrained

1 packet taco seasoning

1 packet ranch dressing mix

1 cup beef or chicken broth

1/2 cup water

Optional toppings: sour cream, shredded cheese, chopped cilantro, crushed tortilla chips


Instructions:

1. In a large slow cooker, dump in the kidney beans, black beans, corn, diced tomatoes with green chilies, and diced tomatoes.


2. Add the taco seasoning, ranch dressing mix, beef broth, and water. Stir to combine.


3. If using, add the browned ground beef or turkey to the slow cooker.


4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.


5. Once ready, serve with your favorite toppings, such as sour cream, shredded cheese, chopped cilantro, or crushed tortilla chips.

Ingredients:

1 lb ground beef or turkey, browned (optional)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) diced tomatoes, undrained

1 packet taco seasoning

1 packet ranch dressing mix

1 cup beef or chicken broth

1/2 cup water

Optional toppings: sour cream, shredded cheese, chopped cilantro, crushed tortilla chips


Instructions:

1. Set your Instant Pot to the "Sauté" setting and brown the ground beef or turkey, if using. Drain excess fat and switch to "Cancel."


2. Add the kidney beans, black beans, corn, diced tomatoes with green chilies, diced tomatoes, taco seasoning, ranch dressing mix, broth, and water.


3. Stir everything together and close the Instant Pot lid. Set the valve to "Sealing."


4. Cook on "Manual" or "Pressure Cook" for 10 minutes.


5. Once cooking is complete, allow the pressure to naturally release for 5 minutes, then carefully do a quick release.


6. Serve with your favorite taco soup toppings, such as sour cream, cheese, and tortilla chips.
